PICS: Codfish and Root Vegetables

Work it round, and stick this pot in the oven.

White wine, shallots, and vinegar reducing

Beets are the rouge of dirty roots

Butter added to the reduction

Good enough, but here comes the final touch, what they call Beurre Blanc,  a Froggy way of saying white wine and butter.
